Sweet n Spicy Carrots

Gather and Preparation-

2 Bunches of fresh carrots with the then scrub and trim the tops

1 Tablespoon of olive oil

2 Teaspoons of Honey

1 Teaspoon of Harissa Paste

1/4 cup of 2% plain Greek Yogurt

2 Tablespoons of Tahini

2 Tablespoons of Freshly Squeezed Lemon Juice

1/4 Teaspoon of Salt

1/4 Teaspoon of Pepper

2 Tablespoons of Warm Water

2 Tablespoons of Pistachios chop then toast over low heat.

Cook -

Heat grill to low.

Chop the carrots long ways in half.

Whisk oil, honey, and Harrissa paste.

Soak the carrots with in the oil then add to the grill.

Cook for 12 mins until chard evenly

Mix yogurt, lemon juice, Tahini, salt and pepper.

Add one tablespoon of water. Mix then add the second tablespoon. If you want the sauce to be thinner add more warm water.

Layer over the carrots or dip tour carrots in with the toasted pistachios and enjoy!
