Spring Lunch



Enjoy this recipe on a picnic day!


Grilled Salmon Burgers


Gather these Ingredients -

  • 1 Large Egg

  • 1 LB. Skinless salmon fillet

  • 3 TBSP of Dill

  • 2 Scallions

  • 3 TBSP Parsley

  • Salt

  • Pepper

  • 1 TBSP of Olive Oil

  • 1/2 cup of Greek Yogurt

  • 1 tsp. of Lemon Zest

  • 2 TBSP of Lemon Juice

  • 4 Buns

  • Lettuce

  • Cucumbers

  • 2 Cups of Broccoli

  • 2 Cups of Raddish Sprouts


 

Preparation -


First,

finely chop the salmon fillets then chop the scallions, dill, parsley.


Next,

Whisk the egg until it becomes bubbly. Now fold in the salmon, 2 tablespoons of the dill, and 2 tablespoons of the parsley. Mix in 1/4 of salt and 1/4 of pepper. Create the burgers to the size you like or a 1/2 cup of the mixture for one burger and 1/2" in thickness.


Begin,

heating a grill or oven to medium heat. Add the burgers to the heat for 2 minutes on each side and golden brown.


Now,

Combine the yogurt, lemon zest, and juice with 1 tablespoon of the chopped dill, and 1 tablespoon of the chopped parsley. Mix in 1/4 teaspoon of salt and 1/4 teaspoon of pepper.


Burger Build,

layer the lemon spread onto the bottom buns, add lettuce, then the salmon burger, cucumber, broccoli, sprouts, and top with the top bun.
