Salmon With Cucumber Salad

Ingredients :

4 skinless. Salmon Fillets

1 Tablespoon of olive oil

2 lemon



1 pound of cucumbers

3 ounces of feta

1/4 cup of plain Greek yogurt

1/4 cup of mint

Cracked Pepper

Preparation :

Begin slicing the cucumbers then add to a bowl. Now mix in 1/4 teaspoon of salt and. 1/4 teaspoon of pepper. Zest 1 lemon then chop the lemon in half. Juice the lemon then add 3 tablespoons of juice and the lemom zest to a food processor. Add the greek yogurt and feta cheese to the food processor now puree. Chop the mint then mix the cream and mint into the cucumbers. Grind some black pepper over the cucumber salad.

Prepare the salmon by heating olive oil in a pan over medium heat. Then chop a lemon in half then squeeze slightly now add the lemon to the pan. Prepare the salmon fillets with salt and pepper on each side then add the salmon to the pan for 3 - 6 minutes on each side. Cool the lemons then slice into halves.

Serve and enjoy this meal!
