Blueberry Rolls



Dough Ingredients -

6 Tablespoons of room temperature Unsalted Butter

2 1/4 teaspoons of Non-Rapid Rise Dry Yeast

1/3 Cup Cane Sugar

2 large eggs

3/4 Cup of room temperature Whole Milk

3 1/2 Cups of flour for dough

1/4 Cup of flour for rolling dough

1 teaspoon of Poppy Seeds

1 teaspoon of pink Himalayan salt

1/4 teaspoon of baking soda


Filling Ingredients -

4 Tablespoons of Unsalted Butter

1/2 Cup of packed Light Brown Sugar

2 teaspoons of Cinnamon

2 Cups of Fresh Blueberries


Frosting Ingredients -

4 ounces of room temperature Cream Cheese

1 Cup of Confectioners' Sugar

1 teaspoon

1/2 teaspoon of Pure Vanilla Extract

1 teaspoon of lemon zest

1 Tablespoon of Fresh Lemon Juice

1 tablespoon of Poopy Seeds


 

Preparation -


Dough -

Chop 6 TBSP of butter into smaller cubes then add to a large bowl. Mix in the yeast and sugar. Now add in the milk and 1 egg. Next mix in the flour with poppy seeds, salt and baking soda.

Knead the dough with your hands until all the ingredients are combined. Now, flour your countertop then knead the dough. Add a little flour if it is sticky. Next, place the dough into a large bowl to rest for 2 hours. Cover the bowl with plastic wrap. You can rest this dough in the bowl for a maximum of 12 hours.


Filling -

Mixing 4 tablespoons of butter with brown sugar and cinnamon. Set aside.


Frosting -

Now, add 4 ounces of cream cheese to a large bowl. Next sift 1 cup of confectioners sugar into the cream cheese. Mix vanilla, lemon juice, and lemon zest then add to the cream cheese and sugar mixture. Let this rest for 3 hours. You can also chill for 12 hours.


 

Rollin the dough -

Prepare a countertop with flour. Begin rolling the dough until it is a 12" X 16 rectangle. Stir the filling then layer the dough with the filling evenly. Then layer the blueberries onto the filling. Next, slowly roll the dough into a long roll. Start at the long side and then fold in. then keep genlty rolling until you form a long roll. Now cut into 8 small rolls. Place the rolls onto a baking sheet to rise until room or for 1 hour.


Now Preheat the oven to 375 degrees then beat one egg. Give each roll an egg wash. Next, bake the rolls for 35- 45 minutes or until a light golden brown.

Finally, cool on a wire rack then layer the cream cheese frosting on the top of the rolls and sprinkle with poppy seeds.


Tip - If the outside starts to brown to fast; cover the rolls with foil.
