Fresh Lemon Chicken Soup

🕸️ Ingredients 🕸️ - 

2  Large yellow onions

1 garlic head

1 Rind of parmesan



3 Small Boneless Chicken Breasts or 1 1/4 pounds of chicken

2 Large eggs

6 Tablespoons of fresh squeezed lemon juice

6 Cups of Baby Spinach

12 Cups of water

🎃 Preparation 🎃- 

Begin by chopping the onion and garlic into halves. 

Next, add onions, garlic, the parmesan rind to 12 Cups of water. Now, simmer for 25 minutes then remove the garlic, onions, and rind.

Next 1/2 a teaspoon of salt and pepper to the water. Bring the broth to a simmer, then add the chicken. Now, poach the chicken for 13 minutes. Remove the chicken from the broth then set aside.

Now while the chicken is cooling, whisk the eggs and freshly squeezed 🍋 lemon juice until foamy. Now remove 1 cup of the broth from the pot then whisk 1 tablespoon of the broth into the lemon and egg mixture until you have added the full cup of the broth. Next, whisk the lemon broth slowly into the broth in the pot. 

Now, reduce the heat of the broth to a medium low heat. Next, shred the cooled chicken. Remove the broth from the heat after it has thickened and cooked for 5 minutes then add the chicken and baby spinach to the broth. Now, mix then cool for 5 minutes.
