BBQ Jackfruit Sliders & a Side of Pineapple Slaw
Prepare this quick and easy slow cooker meal in 25 minutes
1 - 8 ounce can of tomato sauce
2 tablespoons of packed brown sugar
2 tablespoons of molasses
1 tablespoon of chili powder
1 tablespoon of salt
1 tablespoon of pepper
2 large cloves of garlic
2 small red onions
2 - 14 ounce cans of young green jackfruit in brine or water
2 tablespoons of fresh lime juice
1 teaspoon of honey
1/4 small pineapple
1 cup of fresh cilantro
12 slider buns
3/4 Cup of water
Begin by removing all the skin from the pineapple. Then chop into matchsticks, and remove the core.
Next finely chop the garlic and red onions.
BBQ Jackfruit -
Start by adding tomato sauce to the slow cooker. Next, mix in sugar, molasses, and chili powder. Now stir in water, and 1/2 teaspoon of salt.
Combine in 1 3/4 chopped onion, garlic, and jackfruit.
Cook on high for 3 - 4 hours or until the jackfruit is tender
Pineapple Lime Slaw -
Whisk lime juice, honey, salt and pepper. Toss the lime juice sauce with 1/4 of the red onion, cilantro and the pineapple.
Begin by slicing one avocado.
Shred jackfruit, serve onto the rolls topped with avocado and pineapple lime slaw.
