Broccoli Steaks and Tomato Jam for Lunch


Gather these ingredients -

  • 1 pint of cherry tomatoes

  • 1/4 cup of sugar

  • 1/2 teaspoon of chili powder

  • 3 1/2 ounces of baguette

  • 1 1/2 finely grated parmesan cheese

  • 2 tablespoons of olive oil

  • 2 Halved broccoli crowns

  • 1/2 Cup of Water

Begin by preheating the oven to 425°

Next, simmer 1/2 Cup of water with 1 pint of cherry tomatoes, 1/4 cup of sugar, and 1/2 teaspoon chili powder.

Now, pulse the baguette with the parmesan into course crumbs. Bake on a rimmed baked sheet for five minutes.

Next, heat two tablespoons of olive oil on a cast iron skillet. Cook the broccoli until golden brown on the sides that have been cut for 5 minutes.

Finally, flip and season broccoli with salt and pepper. Now roast for 17 minutes in the oven.

Enjoy your broccoli steaks covered in the parmesan breadcrumbs and dipped in tomato jam.
